This Easter, Apéritif Restaurant Bali invites guests to mark the occasion through its 7 course Signature Degustation, set within the quiet grandeur of its colonial manor in Ubud. Guided by Executive Chef Nic Vanderbeeken, the experience reflects the spirit of renewal and seasonality that defines both the holiday and the restaurant’s philosophy.
The journey opens with delicate canapés that echo the freshness of spring. Light, expressive creations such as the signature charcoal puff with smoked mackerel and vibrant seasonal compositions offer a sense of awakening, an invitation to begin again.
Seafood courses follow, celebrating clarity and new life through refined expressions of the ocean. Caviar paired with oyster and crab brings purity and quiet indulgence, while king prawn with young mango and fermented honey introduces gentle brightness and balance, capturing the optimism of the season.
The menu then turns to deeper, more contemplative notes. Venison Wellington, enriched with foie gras and a rendang inspired sauce, reflects tradition and gathering, honouring the timeless ritual of sharing a meaningful meal. Kagoshima Wagyu A5, served with elegant jus and nuanced local spice, offers warmth and generosity, grounding the experience.
The Easter story concludes with a composed dessert by Pastry Chef Dayu Chintya. Inspired by themes of transformation and renewal, her creation offers lightness, delicacy, and a sense of quiet celebration.
